Charmat / Martinotti Method – Context of the “Grand Cuvée” Serena • The Charmat method is used for many Italian sparkling wines, including Prosecco. Unlike the classic method, secondary fermentation takes place in a large, sealed container (autoclave), where a temperature-controlled secondary fermentation begins. • Yeasts and sugar are added to the clarified and filtered base wine. Fermentation lasts 15 to 20 days; for higher-quality sparkling wines, the autoclave can be extended for longer contact with the yeasts. • Finally, the wine is cooled, filtered, dosed, and bottled.
